Happy Summer everyone! Seriously, summer is my favorite time of year, even though it is just swelteringly hot…EVERY. SINGLE. DAY. I love it, I just love it, I swear, can’t you tell?! So here’s the thing: its obviously super hot, and I just finished school forever, so I’m all about a nice, cold cocktail whenever I can get my hands on one…better yet, how about popsicle cocktails…aka, a POPtail?! I thought I’d combine something super cold (popsicles!) and vodka, specifically SVEDKA vodka, in one cocktail. In our household, SVEDKA is kind of a staple. We always have this delish Swedish vodka on hand for entertaining or nights in. SVEDKA is actually the #1 imported vodka in the US, which totally makes sense because Sweden has been perfecting the craft of vodka for hundreds of years. I love it when they come out with this super festive and patriotic bottle every year…it may be Swedish vodka, but they sure do know how to get down with the 4th of July celebrations. Alright, so let’s get down to what you came for…this red, white, and blue popsicle cocktail recipe!
Star Spangled Banner Popsicle Cocktails
You will need:
1 Bottle of SVEDKA vodka (duh, the bottle is red, white, and blue)
Fresh Strawberries
Fresh Blueberries
I can of coconut milk (I used light because my bachelorette party is coming up!)
Vanilla extract
Sugar or Sugar Substitute of choice
Cream Soda (diet or regular, your pick!)
Popsicle molds
Ok, so this recipe is a little complicated, but there’s a great payoff, so hang tight. First of all, you have to make the popsicles, and its a little bit of a process. The first step is to take your strawberries, throw them into a high-powered blender or food processor with a dash of sugar subsitute or sugar, and puree the crap out of them. Once you do that, fill your popsicle molds ⅓ of the way, stick it in the freezer, and allow to freeze completely. Next, take your coconut milk and blend with about a teaspoon of vanilla extract. Take your popsicle mold out of the freezer and fill another ⅓ of the popsicle mold with the coconut mixture. You’ll want to let this layer get almost all the way frozen, and then stick your popsicle sticks in, with about ⅓ of the stick outside the mold. Next, when the coconut layer is frozen solid, take your blueberries and put them into a high powered blender or food processor, along with a dash of your sweetener of choice, and a splash of water, and puree away. Fill another ⅓ of your popsicle mold with this mixture, and allow to freeze completely.
Alright. So once you’ve made your popsicles, the hard part is behind you! Essentially, the popsicles are going to serve as your ice in these popsicle cocktails as well as added flavor. Brilliant, I know. Now, all you need is your SVEDKA and your cream soda variant of choice. I went for the diet variety because I like a less sweet cocktail, but feel free to go full on sugar rush and do the real thing…#YOLO! Simply stick a popsicle into your glass headfirst, pour in an ounce and a half of SVEDKA, and top off with your soda, and voila! You have a delicious and super instagram-worthy cocktail for your 4th of July gathering! It is sweet and fruity and refreshing…perfect for the hottest of summer days!
